The Birds and the Teas

Olive & Pat are passionate about bringing a modern twist to handmade Chutneys, Relishes and Preserves. They make them in the traditional manner, in large preserving pans, using the finest quality of ingredients. Locally sourced from their home in Co. Louth, "The Boyne Valley", where possible.

Their customers often describe their products as "memories in a jar", bringing them back to the kitchens' of their childhoods. Coming from a farming background, and now living in County Louth, brings an understanding of the seasonality of Irish produce and how to use it to its full potential.

Olive's Mum always baked and made her own jams and chutneys – everything from Blackberry and Crab-apple Jelly in the autumn, to Elderflower cordial in the early Summer. She learnt so much from her. Probably wish now she had even listened more carefully, but she thinks we all say that about things as we get older! As she would always say; "Its very simple, if you put the good stuff in - you get the good stuff out! "

For Pat, it was Summers spent on his Uncles farm down in Baltinglass, which instilled in him an appreciation for country living and homemade seasonal delights. When Olive left school her friends encouraged her to take up a career in catering, but like a lot of people of her age, a steady job in the bank was offered, and it was only thirty years later that she got the opportunity to do what she really loved.

For Pat, the retail world beckoned and he had a varied career in administration and retail, he loved selling to customers and being front of house and that hasn't changed. Having left the corporate world, they are now rediscovering their passions for using fresh seasonal ingredients to make wholesome and delicious tea-time favourites, with a truly modern twist, and selling them directly to their customers at their various farmers markets.
